AP Camera

I knew it's a camera with access point function, so would the video streaming transmit via wifi?

If the answer is YES, how could it overcome the interference to guarantee the transmission is stable? because the stable connection is important to video communication.

If your referring about the Engenius Camera's..It is capable of connecting wirelessly but it doesn't have an access point functionality

Wireless Camera's are recommended in close range environment where wireless signal is still stable.

It's a 2x2 11ac AP with a 2MP dome camera all in one device.

Is there limitation of concurrent users in AP function when camera is running?

No, the Camera and AP are separate hardware components.

So the AP function should be the same as any other EAP/EWS of the same spec.

In MESH mode are you losing 50% bandwidth or are you losing one of the bands due to backhauling to another unit?

The AP is dual concurrent radios.
One would be configured as AP mode, the other is kind of like Repeater mode (Backhaul + AP).

Therefore for the band used for backhaul, you will lose half the bandwidth like typical Repeater.
